Ramberg Gjestegård AS On the outer side of the Lofoten
archipelago, with a gorgeous view of the great ocean and a
kilometer-long sandy beach, the restaurant of Ramberg
Gjestegård is located. This is where we find inspiration
and make use of the resources this wild and beautiful
nature so graciously offers us. From the ocean we can
offer you fresh fish brought ashore by the local fishing
fleet, or we prepare the raw materials based on methods
that have been passed on from generation to generation
through hundreds of years: like drying, bokning
(half-drying), salting, curing and smoking. From the land
we get the tastiest herbs which develop a rare taste and
aroma during the long, light summer nights. When it comes
to the meat production in Lofoten, we especially
appreciate the Lofot lamb, which grazes on salty grass
found between rocks along the shore and juicy herbs far up
into the mountains. We like to say it comes freshly
marinated… For several hundred years the fish caught in
Lofoten have been exported to other countries. Many of our
traditional meals show signs of being influenced by these
international relations, but they are still based on our
own exceptional raw materials. In a world that keeps
getting smaller this influence keeps growing, but we see
it as our task to preserve the traditions while at the
same time developing new courses based on our resources.
This can best be achieved through our membership in the
Arctic Menu, a network of North Norwegian restaurants
whose goal is to utilise local raw materials and develop
these further. Here at the outer side of Lofoten the
conditions are especially good for air drying both meat
and fish during the cold season. Because of this we have
consulted the local pensioners and created a three-course
“Flakstad menu” based on local drying methods. The menu
consists of gammelsteik (salted and air-dried leg of
lamb), boknafisk (half-dried cod), and for dessert we had
to include rhubarb – in this case as a compote – this
plant which so eagerly grows regardless of the weather
conditions. In addition to being a place where you can
enjoy good food, our restaurant is also a showcase for
very talented local artists. The phrase local experiences
– for everybody from far and near mostly covers what we
stand for. As a Miljøfyrtårn certified business we also
want as many of our raw materials as possible to be
locally rooted and utilised in a sustainable way. As such
we as a business have no qualms about announcing that we
have actively joined the fight against oil production in
